MAIN RESPONSIBILITIES

  • Defines food standards and ensures quality in food products together with the Executive Chef;
  • Plans menu, keeping in mind budget, and availability of seasonal ingredients;
  • Oversees all the Kitchen operations;
  • Identifies and develops new products and recipes so as to renew offering together with the Executive Chef;
  • Assists the Executive Chef in the setting up and/or reviewing of the Departmental SOP’s;
  • Manages food costs by accurately costing menu items, monitoring inventory levels, and minimising waste;
  • Manages and leads the culinary team;
  • Enforces safety and sanitation in the kitchen in line with HACCP standards.

QUALIFICATIONS AND PROFILE

  • A minimum of 5 years’ experience in a Chef position
  • Diploma in professional culinary arts or equivalent
  • Knowledge in Quality Assurance, Food Safety & Sustainability concepts
  • Be health and safety conscious and conversant with HACCP requirements to ensure
  • Excellent leadership, communication skills and organisational ability;
  • Should possess a pleasant and outgoing personality
  • Able and willing to perform odd hours of work including Sundays, public holidays and cyclonic days;
  • Fluent in English and French
