MAIN RESPONSIBILITIES
- Organises the department according to management directives, in conformity to the hotel policy, procedures and standards.
- Develops, defines and reviews the Departmental SOP’s.
- Consults occupancy list and forecast lists and plans accordingly.
- Proposes changes in the pricing strategy in consultation with the Food & Beverage Manager, based on competition analysis while keeping in mind the target customer.
- Monitors and Ensures requisition for replenishment of stock to ensure supplies as well as stock.
- Prepares and ensures implementation of departmental Budget.
- Controls all kitchen expenses to remain within budgeted costs.
QUALIFICATIONS AND PROFILE
- 5 years’ experience in similar position or have held position of Chef de Cuisine with a 5-Star hotel.
- Higher School Certificate or equivalent.
- Diploma in Hotel Management from a recognised institute or equivalent.
- Knowledge in Hygiene Control and HACCP Standards.
- Be dynamic, self-motivated and should possess good leadership and communication skills.
- Have a pleasant and outgoing personality. Fluent in both English and French.
- Ready to perform odd hours of work.
