MAIN RESPONSIBILITIES

  • Organises the department according to management directives, in conformity to the hotel policy, procedures and standards.
  • Develops, defines and reviews the Departmental SOP’s.
  • Consults occupancy list and forecast lists and plans accordingly.
  • Proposes changes in the pricing strategy in consultation with the Food & Beverage Manager, based on competition analysis while keeping in mind the target customer.
  • Monitors and Ensures requisition for replenishment of stock to ensure supplies as well as stock.
  • Prepares and ensures implementation of departmental Budget.
  • Controls all kitchen expenses to remain within budgeted costs.

QUALIFICATIONS AND PROFILE

  • 5 years’ experience in similar position or have held position of Chef de Cuisine with a 5-Star hotel.
  • Higher School Certificate or equivalent.
  • Diploma in Hotel Management from a recognised institute or equivalent.
  • Knowledge in Hygiene Control and HACCP Standards.
  • Be dynamic, self-motivated and should possess good leadership and communication skills.
  • Have a pleasant and outgoing personality. Fluent in both English and French.
  • Ready to perform odd hours of work.
